Butter
Butter is essentilally the fat of the milk. It is usually made fromsweet cream and salted. However, it  can also be madefrom acidulated or bacteriologically sourced cream and saltless (sweet) butters are also available.
Butter should have a uniform colore, be dense and taste cleam. the water content should be dispersed in fine droplets  so that the butter looks dry. The consistency should be smooth so that the butter is easy to spread and melts reading on the tongue.
